

I love to make yellow grits, especially Zea's Rotisserie and Brewery version. I like mine to cook for a while, till it's nice and creamy. I added a red onion....I normally use green onions, but didn't have any...it's the perfect solution to adding more flavor. This one is definitely packed full of flavor and is just perfect for breakfast or dinner.Ingredients2 cups water2 cups heavy cream1 cup yellow grits1/2 pound butter1 tablespoon salt1 ear grilled corn, kernels removedTo grill corn, shuck off husk. Lightly butter corncob and grill over charcoal or open fire until slightly blackened. Cool corn and cut kernels from cob with a sharp knife. Bring liquids to a boil. Stir in grits. Add butter. Cook at simmer until thickened. At end, stir in corn.Notes: If you don't have a grill, you can always saute the corn on the stove. Also if you really want to add some flavor you can use chicken broth in place of the water. You can also top it off with some fresh herbs like parsley. Yellow grits can be found at Whole Foods....
