If you’re a fan of easy, Italian food, than you’re going to love this recipe. I made this dish Valentine’s Day for a romantic dinner for my parents. I served it with rustic bread and a spinach salad. This recipe can easily be doubled or tripled to serve a crowd.Ingredients:1 pound sweet italian sausage links, cut into 1-inch pieces3 baking potatoes (about 1 1/4 pounds), peeled and cut into 1-inch pieces1/2 pound mushrooms, quartered1 onion, coarsely chopped2 cloves garlic, finely chopped2 tablespoons extra-virgin olive oilSalt and pepperOne 28-ounce can crushed tomatoes with italian herbs1/4 bunch, flat-leaf parsley, coasrsely chopped
